This recipe began life as a marinade for fresh swordfish created by JJ Willis at Osprey Seafood Market in Napa, California. Then we tried it on pork tenderloin. Wow! Chicken? Bring it on. The only limit is your imagination.
2 TBS If & When Cumin Garlic Preserved Meyer Lemon Paste
2 TBS Sambal chili sauce
1 TBS each fresh ginger and garlic
1 cup orange juice
1/3 cup soy sauce
1/3 cup honey
Mix all ingredients until blended.
Marinate raw meat, fish or vegetables for up to 3-4 hours before cooking (longer = stronger flavor).
