From the 2019 California Meyer Lemon harvest — imperfect citrus sourced from organic, family-owned farms in Santa Cruz and Ventura counties, cured with fresh rosemary from a Northern California farm and barrel-aged for more than five years.
Bright and herbaceous. The rosemary deepens with preserved lemon's natural umami, making it a go-to rub, glaze and finish.

Meat & Poultry
Rub lamb, chicken and Cornish hens with 1+ tsp per serving before grilling or roasting. Marinate 30+ minutes; use less if marinating overnight.
Vegetables & Legumes
Lightly coat potatoes before roasting. Stir into white bean ragout and garlic confit. Spread on radishes with softened butter.
Seafood
Whisk into butter and oil while pan-searing shrimp or scallops.
