Butter's loyal companion and flavor saver. Salt-cured, barrel-aged—a deeper version of the classic flavor combination.
From the 2019 California Meyer Lemon harvest — imperfect citrus sourced from organic, family-owned farms in Santa Cruz and Ventura counties, cured with fresh rosemary from a Northern California farm and barrel-aged for more than five years.
Rosemary is the dominant scent — bold and piney in the jar. Once it hits heat or fat, it mellows into a bold, herbaceous depth that makes it a go-to rub, glaze and finish.
Usage Tips
In small quantities, If & When balances the flavor of every ingredient in a recipe, making each a better version of itself. Measure with a teaspoon or to taste.
Spread
Toast, sandwiches, wraps and radishes with softened butter.
Mix
Salad dressings, marinades, white bean ragout, garlic confit and seared seafood butter.
Marinate/Rub
Lamb, chicken, Cornish hens, potatoes and vegetables before roasting or grilling.
What Makes It Different
The longer If & When rests on raw meat, fish and vegetables before cooking, the stronger the flavor and the less you need.
Meat & Poultry
Rub lamb, chicken and Cornish hens with 1+ tsp per serving before grilling or roasting. Marinate 30+ minutes; use less if marinating overnight.
Vegetables & Legumes
Lightly coat potatoes before roasting. Stir into white bean ragout and garlic confit. Spread on radishes with softened butter.
Seafood & Pantry
Whisk into butter and oil while pan-searing shrimp or scallops, or stir into warm olives with garlic and chili flakes.

- Jar net weight: 4.2 oz. (119 g) | Filled to 4.4+ oz (about 8–9 TBS)
- Refrigerate after opening to maintain optimal flavor and texture.
- Due to the natural curing process, you may notice color variations. This is a natural part of the aging process and does not affect flavor or quality.
- The best by date anticipates peak flavor and texture. It is a quality date, not an expiration date. Preserved lemon is shelf stable due to its high salt content and low pH.
