Clementini Redux

Cheers! If & When acts is a natural flavor balancer in this sparkling cocktail. Allspice, cinnamon and bay leaf infused with Meyer lemon in our Moroccan blend add a warm, aromatic layer, while the salt rounds the sharp edges of the spirits. Preserved Meyer Lemon mellows the "bite" of the vodka and Cointreau, making the drink smoother and allowing the sweetness of the clementines to shine.

Yields 10–12 drinks

Need 

  • Juice of 6 clementines

  • 2 clementines for garnish

  • 3.5 ounces vodka

  • 3.5 ounces Cointreau

  • 1 TBS If & When Moroccan Preserved Meyer Lemon Paste

  • 1 bottle (750ml) Prosecco, Cava or Champagne, well chilled

Do

  • Chill martini glasses or champagne flutes in the freezer

  • Juice 6 clementines and strain into a large jug

  • Add the vodka, Cointreau and If & When. Whisk thoroughly to circulate the Preserved Meyer Lemon and meld the flavors.

  • Chill for at least 1 hour or up to 1 day

  • Thinly slice some clementine peels

  • To serve, place a peel in each glass, fill halfway with the chilled mixture and top with sparkling wine.
