What Makes It Different

Moroccan Preserved Lemon is a rub for raw meat, fish and vegetables; an essential baking and cocktail ingredient that moonlights as a cheese pairing.

Savory & Sweet

For savory dishes, Moroccan Preserved Lemon shines in tomato-based broths, braises and tagines, adding complexity to all the other ingredients.

If & When also adds a floral note to soft cheeses like ricotta (start with a teaspoon) and deepens when mixed a day in advance.

In desserts, the Moroccan blend replaces lemon juice and zest, adding umami from spices. When marinating fruit with sugar and preserved lemon, you can often reduce the sugar called for in the recipe, since If & When draws out the fruit's natural sweetness.

  • The best by date anticipates peak flavor and texture. It is a quality date, not an expiration date. Preserved lemon is shelf stable due to its high salt content and low pH.

Adds great depth of flavor

My favorite uses for this are salads and soups....adds something almost indescribable other than "depth." When I run out, and am forced to cook without, I notice the difference in flavor immediately.

I use it nearly every day

I use it nearly every day. Last night it went on swordfish, but it’s just as good on chicken. My favorite, though, is vegetables—I mix it with World Spice harissa and olive oil (or melted ghee), toss my veggies, and roast. The flavor is incredible.

I love making salad dressings with this product

I love making salad dressings with this product. A few dollops of Moroccan with minced garlic, some balsamic and olive oil, salt and pepper and I crave my salads more than the main dish. Though I love it on main dishes as well - especially to marinate lamb and salmon.
