Meyer lemon bars are the exclamation point to any meal, brightening with their optimism (hello color!) and simplicity (8 basic ingredients).
Need
1 cup flour
½ cup powdered sugar
½ cup butter
Filling
1 cup granulated sugar
2 eggs beaten
2 TBS flour
½ tsp baking powder
1 TBS If & When Moroccan Preserved Meyer Lemon Paste (more to taste)
Do
Preheat over to 350F. Grease or line an 8 x 8" pan with baking paper.
Cream together butter and sugar. Add flour, mix until just blended. Pat mixture into pan.
Bake at 350F for 20 minutes or until barely golden.
Blend filling ingredients. Pour into baked crust and return to the oven for an additional 20 to 25 minutes at 350*, or until a toothpick inserted in the middle is removed clean.
Cool completely. Cut into squares.
Dust with powdered sugar if desired - we don't. We like a bar with more pucker. (To double batch, bake in a 13 x 9" pan.)
