Soy Sesame Dressing

Addictive in every good way, Preserved Meyer Lemon harmonizes all the other ingredients in this go-to dressing for greens, rice and more.

Need

2 TBS soy sauce

2 TBS rice vinegar

1 TBS sesame oil

1 tsp freshly grated ginger

1/2 garlic clove, minced

1 TBS maple syrup

1/2 TBS tahini

1 tsp Bay Leaf Preserved Meyer Lemon Paste or more to taste

2 TBS olive oil or to taste

1 tsp toasted sesame seeds (optional)

Do 

Combine all ingredients except the olive oil in a small bowl and whisk together. For a smoother consistency, blend in a small food processor or hand blender.

Gradually whisk in the olive oil 1 TBS at a time until the dressing is smooth and emulsified. Use less than the suggested 2 TBS if you want a tangier taste.

Stir in toasted sesame seeds if desired.

Serve over your favorite salad, steamed greens or a poke bowl.

Notes

This recipe yields enough dressing for two side salads for two or a larger one serving three to four people.  

Store in an airtight container in the refrigerator for up to a week. A night in the fridge results in a creamier dressing and the flavors meld even more.
