Why choose, when you can satisfy a sweet tooth and enjoy oats, nuts and seeds with bite (and cheese)? Two recipes, two blends of If & When, both great flavors for breakfast or snacking.

Need
4 cups rolled oats
1/2 cup mixed seeds and nuts of your choice, such as almonds pipitas, sunflower seeds, chia, etc.
1 tsp ground cinnamon
1 TBS vanilla extract
1 TBS If & When Moroccan Preserved Meyer Lemon Paste
1/2 cup extra virgin olive oil
1/4 cup honey
1/4 cup dark maple syrup
3/4 cup dried fruit such as raisins, cranberries, apricots, mango (optional)
1 cinnamon quill (very optional) - add to mixture in oven tray before baking to amp up the aroma
Do
Preheat oven to 350F.
Line baking sheet with baking paper.
In a large bowl, combine oats, nuts and cinnamon.
In a small bowl blend honey, vanilla, lemon paste and olive oil, then add contents to large bowl and blend until all oats and nuts are covered in the wet mixture.
Spread granola onto baking sheet. Top with quill.
Bake for about 20-25 minutes, stirring every 5 minutes or so to move granola to the middle, especially if your oven crisps oats on the edges of the tray faster than the middle. You want an even, lightly golden color throughout.
Cool granola before adding dried fruit.

Need
3 cups rolled oats + 1/2 cup steel cut oats
8 oz buttermilk
2 tsp Bay Leaf Black Pepper Preserved Meyer Lemon Paste
1/2 cup suger 4 oz melted butter
1 1/2 cups assorted nuts and seeds of your choice
1/2 cup dark maple syrup
1/2 cup melted coconut oil
1/4 cup fresh herbs
1/2 cup fresh grated cheese, such as Irish cheddar
Do
Combine all ingredients except herbs and cheese and let sit for 30 minutes. Meanwhile, preheat oven to 225F and line a sheet pan with baking paper.
After 30 minutes, add the nuts, syrup and coconut oil.
Cook for 60 minutes, tossing every 20 minutes.
Cool, then add herbs and sprinkle with cheese before serving.
Store in an airtight container at room temperature for 1 week or 2 weeks in the fridge (without fresh herbs and cheese).
